Cocktails With Twists are Favourite

Classics have remained classics because they are base foundations for cocktails. However, Tobias Carvalho always tries to twist them in as many ways as possible. And occasionally, he stumbles upon a totally new age cocktail that doesn’t follow any family of cocktails.

Bartending has always been his first love. He got introduced to alcohol at a very young age due to the immense number of parties hosted by his family. As a result of this exposure, he was induced to skip graduation to enter the hospitality industry. “I started with an F&B course and immediately moved to a bartending school called Cocktails and Dreams in Mumbai,” reveals Tobias.

Tracing his professional journey, he says that soon after, he joined Bonobo in Bandra, Mumbai. There he learned the basics of how to set up a bar with speed as it was a high-volume bar. However, he always yearned to work in a cocktail bar.

After that he got an opportunity to work at Ellipsis. During its prime, Ellipsis was one of the best cocktail bars in the country. He was lucky to be part of Corralejo finals in 2013 and then Bacardi Legacy Cocktail Competition finals 2014 and Diageo World Class finals 2014. Life took a turn for better when in 2014, he got an offer for Tresind Dubai, and he took it up.

In Dubai, he was exposed to a lot of international standards of bartending and got to meet some of the best bartenders of the world. Names like Alex Kratena, Simone Caporale, Erik Lorincz, Ago Perrone, Daniele Dalla Pola and Sam Ross, to name a few. After his four-year stint in Dubai, he was offered a position as a Bar Manager in Delhi for Home Bar, a members only club by PVR cinemas. “And so far, 2019 has been a great journey where I was already part of three national finals,” he observes.
